Finding a single glazed( monolithic) unit as a single or twin will be difficult. If cost is not an issue contact a glass shop and ask them to quote with tempered store front. Doing window and door foam with out a progun is difficult.
You your OP you asked about how. leave the exterior cover strip in place if it is nicely sealed to the exterior, spray the gaps half full, let expand and cure, knife off excess, reapply inside cover.

Based on the photo I would estimate those openings to be 9 to 10' wide and 7' high. You can do operating windows or patio doors. In PD or SGD you could do a two panel slider in each opening. If the windows are hour glassed then either the jamb jacks were not used properly or they need to be shimmed.
