Finding a single glazed( monolithic) unit as a single or twin will be difficult. If cost is not an issue contact a glass shop and ask them to quote with tempered store front. Doing window and door foam with out a progun is difficult.
You your OP you asked about how. leave the exterior cover strip in place if it is nicely sealed to the exterior, spray the gaps half full, let expand and cure, knife off excess, reapply inside cover.
How many do you have to do?

Based on the photo I would estimate those openings to be 9 to 10' wide and 7' high. You can do operating windows or patio doors. In PD or SGD you could do a two panel slider in each opening. I just recently reglazed my first AW DH sash. It went well.
But it was from this century.
If you have a plan for replacing the vinyl stops then maybe.
But I would go with pennywise and pond foolish if you do.

If the windows are hour glassed then either the jamb jacks were not used properly or they need to be shimmed.

Full tear or insert? How does your current trim look? Interested in changing style? What would be the advantages to you in either case?
The full tear add is a good price. Though this is not your full in cost. You need to add interior painting to your cost.

If you want the Okna 500DX then ask the bidder to sharpen the pencil.
In our area the that might cost $13,500. wh/wh, DX, half screen, 101Ui or less, no tempered glass.
